In Los Angeles, where trends seem to be green juices and cashew cheeses, it can feel good to return to our primary nature and sink our fangs in a nice piece of meat. If man is a social animal, he is most of all a hungry beast – and this is what we’re interested in today. The chicken liver toast, which has been emulated in other popular spots, is rich and perfectly balanced by caramelized onions. The veal brains are as crispy as sweetbreads, marinated in vadouvan and served with an apricot purée for which you’ll end up licking the plate. For those who have eyes bigger than their stomach, there’s a whole turkey leg, Flintstones-style. The hamachi tostada is incredibly delicate and fresh: Aziz Ansari swears by it and became the best ambassador of these “two dudes” Jon Shook and Vinny Dotolo. The wine list has every you need: the good, the expensive, and the mysterious – again chosen by Helen Johannessen (we already told you about her here, here, or there). You can always order French red wine, the ideal alter ego for offal. Beef tendon chips, rabbit larb, bone marrow, pig ears, veal’s head terrine… One thing is sure, there’s no a single chance of running into a vegan friend at Animal.
