With Cento Pasta Bar, Avner Lavi created a new restaurant model — but most of all he found the way to serve exceptional pasta for less than 10 bucks. In residence at Mignon Wine Bar during lunch break, the former Bestia chef didn’t bother opening his own place: he focused on perfect pasta instead. Crab and uni spaghetti (for half the price of everywhere else in town), cloud-like gnocchis, beautiful beetroot pasta with a dollop of goat cheese on a blue china plate. Hands down the best pasta deal in town.
