Orsa & Winston (named after the chef’s dogs) is a mix of Italian and Japanese influences, with creative pasta, seafood stews, donabe and breakfast omakase. It is the more formal spot from Josef Centeno, who reigns over Downtown LA with Bar Amá and Bäco Mercat. The prix-fixe dinner menu comes in 6 courses (a cheaper 3 courses is available on weekdays), or a super omakase is only available upon request with 48 hours notice. The dishes change daily, but there is usually the signature maple-flavored coddled egg, and a koshihikari risotto with uni, pecorino cream and geoduck. Each menu comes with amuse-bouches, palate cleansers and petits fours but the star of the show is a Japanese milk bread with togarashi-dusted butter.
