Most reviews of Pizzana start by saying that it’s the savory venture of Candace and Charles Nelson, the Sprinkles Cupcakes founders, team up with Chris O’Donnell (famous for starring in Batman & Robin and NCIS). Although all of the above is true, they should start by stating the obvious: Pizzana makes excellent pizzas. Chef Daniele Uditi makes traditional Neapolitan pizzas, perfectly doughy and served on a secret rack that allows the steam to get out without altering the crust. Uditi, a Naples native, replicates his family’s traditions: 48-hour fermentation, thin crusts, wood-fired oven and very larges pizzas — so refreshing in a town like LA where trendy pizzas are getting smaller and smaller! Make sure to share some traditional ones (margherita, tartufo, aglio olio… always using the best and freshest ingredients) and some creatives ones like cacio e pepe, vodka and smoked fior di latte, or a personal favorite: squash blossoms with mozza andsan marzano . Your gluten-free friend won’t have to opt for the salads (Pizzana’s GF crust is the best one we’ve ever tried), although the shaved brussel sprout one shouldn’t be missed, with apple slices, pistachios, and shallot dressing. For dessert, you’ll find some of Candace Nelson’s favorites like an olive oil chocolate cake or a salted caramel panna cotta. You won’t find any cupcakes at Pizzana, but if you must, Sprinkles is only 4 miles away!
