Victor and Sibyle left Spain without thinking twice in order to open a Catalan food truck in Los Angeles — and, nine months later, Tumaca was born. The gleaming red truck loves boasting all around LA, but the real stars of the show are more discreet: sandwiches made with pan tumaca, i.e. two slices of lightly toasted ciabatta brushed with a juicy tomato and extra virgin olive oil. And between these two loaves, all sorts of wonders: sun-drenched roasted vegetables, Peads and Barnetts sausage (the best pork in California), or a serrano and manchego one ironically nicknamed “Happy Bikini”. Keep your eyes on the sides, especially the ham croquettes and patatas bravas. Bravo!
