Guerrilla Tacos
Before starting Guerrilla Tacos, Wes Avila went to culinary school in France and cut his teeth with the likes of Alain Ducasse. Ultimately he decided to meld his classical training with exceptional produce and began slinging wild boar tacos and truffle quesadillas in front of his favorite coffee spots.

When Guisados first opened back in 2010 it was a small family-owned spot specializing in traditional homestyle-braises and fresh made corn tortillas. In the past seven years, four more locations have opened up, but the taco sampler plate remains as amazing as ever.
