La Cevicheria has its own Guatemalan interpretation of the staple South American seafood: ceviche. Julio and Carolina Arellano make a chapin-style preparation with briny bloody clams, also called pata de mula, which gives it an oyster-like aftertaste. Choose between shrimp, crab, and snapper marinated in lime juice with onions and avocado, and spoon it over stone-ground corn tostadas from Tortilleria Acapulco, one of Los Angeles’s best tortillerias. Or do it the Guatemalan way and dip Saltines in your ceviche, Julio will probably show you how to do so.
