Those who read Lucky Peach (the Momofuku-born bible of food weirdos) know that Mapo Galbi is David Chang’s favorite restaurant in the whole wide world. At first glance, we can wonder why. Hidden in a small and very bright room, gigantic extractor hoods, and TV screens with the latest K-pop hits. Ask for the only thing on the menu — “chicken dak galbi”, a large Korean paella with lots and lots of gochujang sauce. And then, at last, you’ll understand what Chang meant. PS: don’t forget to scrape the crispy rice that has stuck to the pan, it’s the best thing in the entire the meal.
