In the outdoor section of Westfield’s food court, there’s a chicken connoisseur: Johnny Lee, barely 30, cooks some of the best Hainan chicken in Los Angeles. There are other Chinese and Singaporean specialties, but we come here for the chicken (and, by the looks of the never-ending lines, everyone else seems to do so as well). He mixes white and dark with with cucumbers and ginger scallion sauce, and then tops a bowl of garlic rice (with melted chicken fat) with a fried egg. Dip it all in a trio of sauces and you’ll reach chicken heaven.
