Have a seat at the sushi bar to order the omakase (if your bank account allows it) or simply to admire the chef’s talent and dexterity: after taking your order, Naruki Matsumoto grabs his knife to slice the fish finely and then scoops the perfect quantity of rice in his right hand, slightly closes his palm to form the patty, and finally combines them with a minimum number of movements.
